Step-by-Step Instructions
  1. Preheat your oven to 180°C (350°F).
  2. Season both sides of the cod fillets generously with salt and pepper.
  3. In a large skillet, heat the olive oil over medium heat and sauté the onions until translucent, about 3-4 minutes.
  4. Add minced garlic and grated ginger, stirring continuously until fragrant, about 1 minute.
  5. Pour in the coconut milk, lemon juice, and lemon zest; stir and let simmer for about 5 minutes.
  6. Arrange seasoned cod fillets in a baking dish and pour the coconut lemon sauce over them.
  7. Bake in the preheated oven for 20-25 minutes until the cod flakes easily with a fork.
  8. Let the dish rest for a couple of minutes before serving.
