Salad
  • 4 cups Lettuce Mix of spinach and butter lettuce; use any mixed salad greens.
  • 1 cup Fresh blueberries Raspberries are a delightful alternative.
  • 1 cup Fresh strawberries Quartered; blackberries can also be substituted.
  • 8 oz Fresh mozzarella Sliced or in balls; dairy-free cheese alternatives can replace mozzarella.
  • 1/4 cup Pine nuts Toasted; replace with sliced almonds or omit if allergic.
  • 1/4 cup Fresh basil Thinly sliced; try mint leaves for a different twist.

Method
 

Preparation Steps
  1. Toast the pine nuts over medium heat for 2-3 minutes, stirring constantly until golden. Transfer to a plate to cool.
  2. In a jar, combine olive oil, balsamic vinegar, crushed garlic, maple syrup, thyme, salt, and pepper. Shake for 30 seconds until combined.
  3. In a large bowl, layer the mixed greens to create a fresh base.
  4. Add the fresh blueberries and quartered strawberries over the greens, then layer with sliced mozzarella.
  5. Sprinkle the toasted pine nuts and basil over the salad, then drizzle with the vinaigrette.
  6. Serve the salad chilled or at room temperature.
