Ingredients
  

Dressing
  • 1/4 cup Olive Oil or avocado oil
  • 2 tbsp Balsamic Vinegar high-quality recommended
  • 1 clove Garlic crushed
  • 1 tbsp Maple Syrup or honey as substitute
  • 1 tsp Dried Thyme or fresh thyme
  • to taste Salt
  • to taste Pepper
Salad
  • 4 cups Lettuce (spinach and butter lettuce mix)
  • 1 cup Fresh Blueberries raspberries or blackberries can be mixed in
  • 1 cup Fresh Strawberries keep whole until serving
  • 8 oz Fresh Mozzarella or bocconcini
  • 1/4 cup Pine Nuts or sliced almonds/chopped pecans
  • 1/4 cup Fresh Basil or mint

Method
 

Dressing Preparation
  1. In a skillet over medium heat, add your pine nuts. Stir continuously for about 2-3 minutes until they turn golden brown and fragrant. Transfer to a plate to cool.
  2. Grab a mason jar, combine olive oil, balsamic vinegar, crushed garlic, maple syrup, dried thyme, salt, and pepper. Seal and shake vigorously for about 20 seconds.
Salad Assembly
  1. In a large serving bowl, place your fresh lettuce, layer the blueberries and strawberries.
  2. Break the fresh mozzarella into bite-sized pieces and scatter over the salad. Add the cooled pine nuts.
  3. Sprinkle fresh basil leaves on top to infuse the salad with aromatic freshness.
  4. Drizzle the homemade dressing over the salad before serving, or serve on the side.
