Instructions for Cheesy Shredded Zucchini Casserole

  2. Trim and shred the zucchini. Sprinkle with salt and let sit for 10 minutes to draw out moisture, then squeeze out as much liquid as possible.
  3. In a mixing bowl, combine the drained zucchini, cottage cheese, mozzarella, cheddar, almond flour, eggs, salt, and black pepper. Mix until well combined.
  4. Pour the mixture into the prepared baking dish, spreading it evenly and patting down gently.
  5. Bake in the preheated oven for about 40 minutes, or until the top is golden brown and set.
