Method
 

Step-by-Step Instructions
  1. Begin by heating a large oven-safe skillet over medium heat for about 2 minutes. Spray with nonstick cooking spray.
  2. Add 1 pound of ground beef and 1 diced onion to the skillet. Sauté for 8-10 minutes until browned and translucent.
  3. Stir in taco seasoning and 1 cup of salsa. Add 1 can of drained black beans, 1 can of sweet corn, and 1 can of diced tomatoes. Simmer for 5-6 minutes.
  4. Add 2 cups of pre-cooked ready rice and mix until incorporated. Sprinkle 1 cup of shredded Colby Jack cheese on top.
  5. Turn on the oven's broiler and place the skillet under heat for 1-2 minutes until cheese is melted and bubbly.
  6. Remove from oven and garnish with fresh cilantro. Serve warm with avocado slices, sour cream, and crushed tortilla chips.
