Dressing
  • 3 tablespoons extra virgin olive oil can substitute with avocado oil
  • 3 tablespoons lemon juice freshly squeezed from a large lemon is best
  • 1 clove garlic minced
  • 1/2 teaspoon sea salt use to taste
  • 1/8 teaspoon black pepper freshly cracked
Salad
  • 1.5 cups cherry tomatoes halved
  • 1 medium English cucumber halved and sliced
  • 15 oz chickpeas rinsed, canned or cooked from scratch
  • 1/2 medium red onion thinly sliced
  • 1 medium avocado slice right before serving
  • 1/4 cup cilantro can substitute with parsley
  • 4 oz feta cheese can swap for vegan feta

Method
 

Preparation
  1. In a small bowl, combine extra virgin olive oil, lemon juice, and minced garlic. Add sea salt and black pepper. Whisk until smooth and well blended.
  2. In a large salad bowl, add halved cherry tomatoes and sliced cucumber. Incorporate rinsed chickpeas, sliced red onion, and gently mix.
  3. Slice avocado just before serving and add to the bowl.
  4. Pour the dressing over the salad and toss to coat evenly. This should take about 1-2 minutes.
  5. Serve immediately or chill in the refrigerator for about 10 minutes before serving.
