Ingredients
  

For the Chickpea Flour Method
  • 1 cup chickpea flour
  • 1 cup water adjust for desired firmness
  • 1 teaspoon salt optional
  • 1 teaspoon turmeric optional
For the Dried Chickpeas Method
  • 1 cup dried chickpeas soaked overnight
  • 2 cups water for blending

Method
 

Chickpea Flour Method
  1. Whisk together the chickpea flour and water until smooth, adding salt and turmeric if desired.
  2. Bring water to a boil in a saucepan.
  3. Gradually pour in the chickpea batter while whisking to avoid lumps.
  4. Simmer the mixture for 5-6 minutes until thickened.
  5. Pour the thickened mixture into a mold and smooth the top.
  6. Chill in the refrigerator for at least 30 minutes.
Silken Tofu Method
  1. Soak dried chickpeas overnight.
  2. Blend soaked chickpeas with water until smooth.
  3. Strain the mixture to remove pulp.
  4. Simmer the strained liquid over medium heat for about 20 minutes.
  5. Pour into molds and chill for at least 1 hour.
