  1. Cook the egg noodles according to the package instructions until al dente, about 3-5 minutes. Drain and rinse under cold water, then toss with vegetable oil and set aside.
  2. Slice the flank steak into thin strips and coat with cornstarch, allowing to rest for about 10 minutes.
  3. Heat vegetable oil in a frying pan over medium-high heat. Fry the beef in batches for 3-4 minutes until golden brown and crispy.
  4. Add more vegetable oil if needed, then sauté the minced ginger and garlic for about 30 seconds until fragrant.
  5. Add broccoli florets to the pan and stir-fry for 3-4 minutes until tender-crisp.
  6. Return the beef to the pan, add the cooked noodles, soy sauce, and oyster sauce. Toss everything together over medium heat for 2-3 minutes.
  7. Drizzle with sesame oil and garnish with chopped green onions. Season with salt and pepper to taste, and serve immediately.

Notes

For best results, rinse noodles under cold water to avoid sogginess, and let coated beef rest before frying for a crispy texture.
