Step-by-Step Instructions
  1. In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
  2. In a large mixing bowl, beat cold butter, brown sugar, and white sugar until light and fluffy.
  3. Add egg, egg yolk, and vanilla extract into the butter-sugar mixture. Mix until well combined.
  4. Gradually add dry mixture to wet mixture, stirring until just combined. Mix in crushed graham crackers.
  5. Fold in chopped milk chocolate and semi-sweet chocolate chips. Cover and refrigerate for at least 2 hours.
  6. Preheat your oven to 400°F (200°C). Scoop out tablespoon-sized balls of dough and place them on lined baking sheets.
  7. Bake for 6-8 minutes until edges are golden but centers remain soft and gooey.
  8. Toast marshmallows until golden brown and gooey, about 30 seconds to 1 minute.
  9. Assemble Smookies by placing toasted marshmallows between two cookies. Gently press together.
