- In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
- In a large mixing bowl, beat cold butter, brown sugar, and white sugar until light and fluffy.
- Add egg, egg yolk, and vanilla extract into the butter-sugar mixture. Mix until well combined.
- Gradually add dry mixture to wet mixture, stirring until just combined. Mix in crushed graham crackers.
- Fold in chopped milk chocolate and semi-sweet chocolate chips. Cover and refrigerate for at least 2 hours.
- Preheat your oven to 400°F (200°C). Scoop out tablespoon-sized balls of dough and place them on lined baking sheets.
- Bake for 6-8 minutes until edges are golden but centers remain soft and gooey.
- Toast marshmallows until golden brown and gooey, about 30 seconds to 1 minute.
- Assemble Smookies by placing toasted marshmallows between two cookies. Gently press together.
