For the Cookie Crust and Topping
  • 1 lb Refrigerated chocolate chip cookie dough can substitute with homemade dough

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Prepare a 13x9” pan lined with parchment paper.
  2. Freeze the cookie dough for 30-60 minutes to firm it up. Cut into 1/4" slices.
  3. Press half of the sliced cookie dough evenly into the bottom of the pan.
  4. Bake the cookie crust for 10 minutes until lightly golden.
  5. In a mixing bowl, beat the cream cheese, egg, sugar, and vanilla until smooth.
  6. Spread the cheesecake filling evenly over the warm cookie crust.
  7. Slice the remaining cookie dough and arrange it over the cheesecake layer.
  8. Bake the assembled bars for 35-40 minutes, until the center is set and slightly jiggly.
  9. Cool before refrigerating for at least 2 hours.
  10. Slice into squares and serve.
