  • 1 teaspoon Kosher Salt Season generously just before cooking.
  • 1 teaspoon Black Pepper Freshly ground adds depth.
For the Gravy
  • 2 tablespoons Oil (Canola or Grapeseed)
  • 2 tablespoons Unsalted Butter
  • 1 medium Yellow Onion Sliced.
  • 8 ounces Cremini Mushrooms Cleaned and sliced.
  • 2 cloves Garlic Minced.
  • 2 tablespoons All-Purpose Flour
  • 2 cups Beef Stock Low sodium, warmed.
  • 1 tablespoon Worcestershire Sauce Optional but recommended.
  • 1 tablespoon Soy Sauce Optional.
  • 1 teaspoon Dried Thyme Can use fresh thyme as substitute.
  • 1 leaf Bay Leaf Remove before serving.

Preparation Steps
  1. Start by patting the beef cubes dry with paper towels. Season with kosher salt and black pepper just before cooking.
  2. Place a heavy skillet over high heat and add oil. Heat until shimmering.
  3. In batches, add the seasoned beef cubes to the skillet. Sear for 2-3 minutes on each side until browned.
  4. Reduce the heat to medium and add butter. Once melted, add the sliced onions and cook for 5-7 minutes.
  5. Stir in the sliced mushrooms into the onion mixture and cook for another 5-7 minutes.
  6. Add minced garlic and dried thyme, stirring for about 1 minute.
  7. Sprinkle flour over the mixture and stir for 1-2 minutes.
  8. Gradually add warmed beef stock while whisking to prevent lumps.
  9. Stir in Worcestershire sauce, soy sauce, and bay leaf. Bring to a gentle simmer.
  10. Let the gravy simmer for 5-10 minutes until thickened.
  11. Lower the heat and add the seared beef cubes back into the skillet. Simmer for 5-10 minutes.
  12. Remove the bay leaf and serve hot with gravy over mashed potatoes or preferred starch.
