- Start by patting the beef cubes dry with paper towels. Season with kosher salt and black pepper just before cooking.
- Place a heavy skillet over high heat and add oil. Heat until shimmering.
- In batches, add the seasoned beef cubes to the skillet. Sear for 2-3 minutes on each side until browned.

- Lower the heat and add the seared beef cubes back into the skillet. Simmer for 5-10 minutes.
- Remove the bay leaf and serve hot with gravy over mashed potatoes or preferred starch.
