Preparation Steps
  1. In a medium bowl, mix together rolled oats, brown sugar, chia seeds, flaxseed, cinnamon, and salt until evenly distributed.
  2. Pour in non-dairy milk, coconut yogurt, and vanilla extract. Mix well until creamy and well-combined.
  3. Spoon the mixture into two mason jars, filling each to the top but leaving space for oats to expand.
  4. Place the jars in the refrigerator and let them chill for at least 4 hours or overnight.
  5. Remove jars from the fridge, stir, and adjust consistency with more non-dairy milk if desired.
  6. Optionally, mix coconut yogurt with lemon juice and maple syrup for icing, and drizzle over oatmeal before serving.
