  • 1 medium Zucchini sliced into rounds
  • 1 medium Red Onion cut into thirds
For the Marinade

  • 2 cloves Garlic minced
  • 2 tablespoons Fresh Herbs like parsley, cilantro, or rosemary
  • 1 teaspoon Salt to taste
  • 1 teaspoon Pepper to taste

Method
 

Preparation
  1. Soak 8-12 wooden skewers in water for 15-30 minutes.
  2. Cut the red onion, bell peppers, and zucchini into evenly sized pieces.
  3. In a bowl, whisk together olive oil, minced garlic, fresh herbs, salt, and pepper.
  4. Thread the vegetables onto soaked skewers, alternating types.
  5. Preheat the grill to medium-high heat for 10-15 minutes.
  6. Grill the skewers for 5-8 minutes on each side until tender.
  7. Brush skewers with leftover marinade and serve.
