Making the Rolls
- Combine warm milk, yeast, and sugar in a bowl; let sit until foamy (5-10 min). Whisk in egg, yolk, melted butter, and vanilla. Gradually mix in flour and salt until a soft dough forms. Knead for 7-10 minutes until smooth. Let rise in a greased bowl for 1-1.5 hours until doubled.
- Mix softened butter, brown sugar, cinnamon, crushed cookies, and chocolate chips in a bowl until combined. Set aside.
- Punch down the dough and roll into a rectangle (16x12 inches). Spread the filling, roll into a log, and slice into 12 pieces. Place in a greased baking dish with cut-side up.
- Cover rolls with a towel; let rise for 30-45 minutes. Preheat oven to 350°F. Bake for 20-25 minutes until golden brown.
- Beat cream cheese and butter until fluffy. Gradually add powdered sugar, vanilla, and milk until creamy. Spread over warm rolls.
- Top with crushed cookies and extra chocolate chips. Serve warm.
