Equipment

  • Large skillet

Method

Step-by-Step Instructions
  1. Begin by peeling and grating two medium sweet potatoes into a large mixing bowl. Cube one tart Granny Smith apple and mix it in with the sweet potatoes. Let the grated sweet potatoes rest for about 10 minutes to drain excess moisture.
  2. Place a large skillet over medium heat and pour in 1 tablespoon of your preferred cooking oil. Allow the oil to heat until it shimmers, about 1-2 minutes.
  3. Add the grated sweet potatoes to the skillet, spreading them evenly. Cook undisturbed for around 10 minutes until caramelized and golden. Stir occasionally.
  4. After 10 minutes, gently stir in the cubed apples and season generously with salt and pepper. Continue cooking for another 10 minutes until fragrant and golden.
  5. Check for desired crispiness, adjusting the heat if necessary. Serve hot, optionally topped with a fried or poached egg.
