Preparation Instructions
  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine ground turkey, breadcrumbs, Parmesan cheese, egg, garlic, parsley, salt, and pepper and mix gently.
  3. Shape the mixture into 1-inch meatballs and place them on the baking sheet, spaced apart.
  4. Bake the meatballs for 20-25 minutes until golden brown and cooked through.
  5. In a large skillet, heat olive oil and add pumpkin puree and chicken broth, stirring until combined and simmers for 5 minutes.
  6. Stir in heavy cream, remaining Parmesan, sage, nutmeg, salt, and pepper, and simmer for another 5 minutes.
  7. Add baked meatballs to the sauce and let simmer for an additional 5 minutes.
  8. Serve meatballs over pasta, rice, or quinoa, garnished with extra sauce and parsley.
