Ingredients
  

For the Crust
  • 2 cups Graham Cracker Crumbs Consider gluten-free options
  • 1/2 cup Finely Chopped Almonds & Walnuts Omit if there are nut allergies
  • 1/4 cup White Granulated Sugar Brown sugar can deepen flavor
  • 1 tsp Cinnamon Can be left out for simpler taste
  • 1/2 cup Unsalted Butter Substitute with coconut oil for dairy-free option
For the Filling
  • 24 oz Full-Fat Cream Cheese Best results with Philadelphia brand
  • 1 cup Granulated Sugar Adjust for sweetness preference
  • 3 Large Eggs Use at room temperature
  • 1 cup Full-Fat Sour Cream Use lactose-free if necessary
  • 1/4 cup All-Purpose Flour For gluten-free use gluten-free flour and double cornstarch
  • 2 tbsp Cornstarch
  • 1 tsp Vanilla Extract Opt for pure vanilla for best results
For the Topping (Optional)
  • 1 cup Sour Cream Mix with sugar for topping
  • 1/4 cup Granulated Sugar Swap with Greek yogurt or add fruit for twist

Method
 

Preparation
  1. Preheat your oven to 325°F (160°C) and wrap the exterior of the springform pan in aluminum foil.
  2. In a mixing bowl, combine graham cracker crumbs, finely chopped almonds, sugar, and cinnamon. Add melted butter and mix until clumped together.
  3. Press the crust mixture into the bottom of the pan and refrigerate while preparing the filling.
  4. In a large bowl, beat cream cheese until smooth. Gradually add sugar, mixing well.
  5. Add eggs one by one, mixing until incorporated.
  6. Sift in flour and cornstarch, gently fold until mixed. Blend in sour cream and vanilla extract.
  7. Pour filling onto the chilled crust and place the pan in a roasting pan. Add hot water until halfway up the springform pan.
  8. Bake for 1 hour and 15 minutes, checking that the edges are set and the center has a slight jiggle.
  9. Turn off the oven and let the cheesecake cool inside for 1 hour with the door ajar.
  10. Remove from the oven and cool on a wire rack for at least 2 hours, then refrigerate for a minimum of 8 hours.
  11. Before serving, mix sour cream with sugar for topping and spread over the cheesecake.
  12. Slice and serve, optionally topping with fresh strawberries or chocolate sauce.
