  • 8 ounces penne or any pasta shape you love
For the Flavor Base
  • 1/2 medium onion, chopped yellow or white onion is recommended
  • 1 tablespoon olive oil extra virgin for best taste
  • 2 cloves garlic, minced fresh garlic is preferred
For the Creamy Sauce
  • 1 package (8-ounce) cream cheese, softened soften beforehand or microwave for 20-30 seconds
  • 1/2 lemon juice and zest use fresh lemons for best flavor
  • 3 dashes italian seasoning
  • 1 cup parmesan cheese, grated freshly grated is ideal
For the Finishing Touch
  • 1 large handful fresh basil, torn substitute with spinach if unavailable
  • 1 tablespoon fresh parsley, chopped finely optional, based on personal preference
  • salt & pepper to taste

Method
 

Cooking Instructions
  1. Bring a large pot of salted water to a rolling boil. Add penne and cook according to package instructions (about 10 minutes). Drain, reserving ½ cup of pasta water.
  2. Heat olive oil in a large skillet over medium heat. Sauté chopped onion for 8-10 minutes until softened and lightly browned.
  3. Add minced garlic to the skillet and cook for 30 seconds until fragrant.
  4. Lower heat and add softened cream cheese, lemon juice, lemon zest, and italian seasoning. Stir for 2 minutes until well combined and smooth.
  5. Mix in ¼ cup of reserved pasta water to adjust sauce thickness, adding more as needed for desired consistency.
  6. Add fresh basil, parsley, salt, and pepper. Toss in drained pasta until coated in the sauce.
  7. Serve immediately, garnished with additional parmesan and fresh herbs if desired.
