Chili Base
  • 2 pounds Chicken Breasts Thawed and trimmed
  • 1 packet Taco Seasoning Or homemade spice blend
  • 1 packet Ranch Seasoning Mix Or homemade version
  • 1 can Canned Black Beans Do not drain
  • 1 can Canned Corn Undrained for creaminess
  • 1 can Canned Rotel Tomatoes with Green Chiles Or substitute with diced tomatoes and jalapeños
  • 8 ounces Cream Cheese For creamy texture, can substitute heavy cream

Method
 

Preparation Steps
  1. Place thawed and trimmed chicken breasts at the bottom of the slow cooker.
  2. Sprinkle taco seasoning and ranch seasoning mix over the chicken.
  3. Add canned black beans, undrained canned corn, and Rotel tomatoes on top.
  4. Place cream cheese on top of the other ingredients.
  5. Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours.
  6. Shred the chicken once cooked and return it to the pot.
  7. Mix in the cream cheese and let cook for an additional 10-15 minutes.
  8. Serve in bowls and garnish with toppings like tortilla strips or avocado.
