- Preheat your oven to 375°F (190°C) and lightly grease a medium-sized baking dish.
- Steam or blanch the mixed winter vegetables for about 3-4 minutes until just tender.
- In a mixing bowl, combine the blanched vegetables with cream of mushroom soup, milk, and shredded cheese. Add thyme, garlic powder, salt, and pepper. Mix until combined.
- Pour the vegetable mixture into the prepared dish, smoothing the top with a spatula.
- Mix breadcrumbs with melted butter and sprinkle over the vegetable mixture.
- Bake uncovered for 25-30 minutes until the topping is golden brown and the filling is bubbling.
