For the Crunchy Coating
  • 1 cup Panko Breadcrumbs Can use gluten-free panko for a gluten-free version.
  • 1/2 cup Grated Parmesan Cheese Optional nutritional yeast can replace for a dairy-free version.
  • 1/4 cup Fresh Parsley Can substitute with dried herbs.
  • 1 tbsp Lemon Zest Introduces bright acidity.
  • 1 tbsp Lemon Juice Introduces bright acidity.
  • 1 tsp Garlic Powder Can use fresh minced garlic if preferred.
  • 1 tsp Onion Powder Can be omitted if not available.
  • 1 tsp Paprika Smoked paprika can enhance smokiness.
  • 2 tbsp Olive Oil Enhances flavor.
  • as needed Cooking Spray Ensures the fillets do not stick while baking.

Method
 

Prep and Bake
  1. Preheat your oven to 425°F (220°C) and prepare a baking sheet with parchment paper.
  2. Pat the cod fillets dry and season both sides with salt and pepper.
  3. In a bowl, mix panko breadcrumbs, Parmesan, parsley, lemon zest, garlic powder, onion powder, and paprika.
  4. Drizzle olive oil over the breadcrumb mixture and toss until the breadcrumbs are evenly coated.
  5. Press each seasoned cod fillet into the breadcrumb mixture, then place on the prepared baking sheet.
  6. Bake for 15-20 minutes until golden brown and internal temperature reaches 145°F (63°C).
  7. Squeeze lemon juice over the baked fillets before serving.
  8. Serve with roasted vegetables or salad.
