Prep and Bake
- Preheat your oven to 425°F (220°C) and prepare a baking sheet with parchment paper.
- Pat the cod fillets dry and season both sides with salt and pepper.
- In a bowl, mix panko breadcrumbs, Parmesan, parsley, lemon zest, garlic powder, onion powder, and paprika.
- Drizzle olive oil over the breadcrumb mixture and toss until the breadcrumbs are evenly coated.
- Press each seasoned cod fillet into the breadcrumb mixture, then place on the prepared baking sheet.
- Bake for 15-20 minutes until golden brown and internal temperature reaches 145°F (63°C).
- Squeeze lemon juice over the baked fillets before serving.
- Serve with roasted vegetables or salad.
