  • 1/4 cup Fresh Parsley Chopped; or dried parsley in a pinch
  • 1 each Lemon Zest and juice
  • 1 teaspoon Garlic Powder or fresh minced garlic
  • 1 teaspoon Onion Powder Optional
  • 1 teaspoon Paprika Consider smoked paprika
  • 2 tablespoons Olive Oil or melted butter
For Baking
  • as needed Cooking Spray or extra olive oil

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly grease it.
  2. Pat the cod fillets dry with paper towels. Season both sides with salt and pepper.
  3. In a shallow bowl, combine panko breadcrumbs, Parmesan cheese, parsley, lemon zest, garlic powder, onion powder, and paprika.
  4. Drizzle olive oil over the breadcrumb mixture and toss until well-coated.
  5. Press each seasoned cod fillet into the breadcrumb mixture to coat both sides.
  6. Place the coated cod on the baking sheet and spray the exposed sides with cooking spray.
  7. Bake for about 15-20 minutes until the crust is golden brown and the fish flakes easily.
  8. Squeeze fresh lemon juice over the cod before serving.
  9. Serve with your favorite sides.
