Step-by-Step Instructions
  1. Cut the thawed puff pastry into 5-inch squares and place on a baking sheet. Preheat oven to 400°F (200°C).
  2. Melt butter in a saucepan over medium heat, whisk in flour and salt until golden. Gradually add warm milk, stirring for about 7 minutes until thickened.
  3. Stir in spinach once the sauce has thickened, then mix in ham and half of the cheese.
  4. Scoop a spoonful of the filling onto each pastry square and fold corners over the filling.
  5. Whisk egg with cold water for egg wash and brush over the pastry tops.
  6. Bake in preheated oven for 20 minutes or until puffs are golden brown.
