Method
 

Cooking Steps
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Slice carrots into thick rounds and boil in salted water for 10-12 minutes until fork-tender.
  3. Using a sturdy glass, gently flatten each carrot round until about half their original thickness.
  4. Place smashed carrots on the baking sheet, drizzle with olive oil, and season with garlic powder, smoked paprika, salt, black pepper, and Parmesan cheese.
  5. Roast in the preheated oven for 20-25 minutes, flipping halfway until golden and crispy.
  6. Garnish with fresh parsley and serve immediately while hot.
