- Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.
- In a large mixing bowl, toss the cauliflower florets with olive oil, salt, garlic powder, and cornstarch.
- Spread the seasoned cauliflower in a single layer on the baking sheet and roast for 25 to 30 minutes, flipping halfway through.
- In a saucepan, combine lemon juice, lemon zest, maple syrup, soy sauce, garlic powder, and black pepper. Bring to a simmer.
- Mix cornstarch with water to create a slurry, add it to the glaze while stirring and let it thicken for 1 to 2 minutes.
- Remove roasted cauliflower from the oven, pour the glaze over it, and gently toss until coated. Serve immediately.
