- Begin by grating two medium zucchinis using a box grater. Transfer the grated zucchini to a clean kitchen towel and twist it to extract excess moisture. This step will take about 5 minutes.
- In a large mixing bowl, combine the drained zucchini, ½ cup of grated Parmesan cheese, ½ cup of breadcrumbs, ¼ cup of finely chopped onion, 2 minced garlic cloves, 2 beaten eggs, and ¼ cup of flour. Season with salt and pepper to taste and mix thoroughly. This should take about 4-5 minutes.
- Using your hands, shape the mixture into small, compact patties, roughly 2-3 inches in diameter. This step will take around 5 minutes.
- Heat ¼ cup of olive oil in a large skillet over medium heat. Carefully place the formed patties into the skillet, cooking for 3-4 minutes on each side until golden brown and crispy.
