  • 1/2 cup Parmesan Cheese or pecorino for a twist
  • 1/2 cup Bread Crumbs gluten-free breadcrumbs if needed
  • 2 large Eggs or flax eggs for a vegan option
  • 1/4 cup All-Purpose Flour swap for gluten-free flour if needed
  • 1 medium Onion chopped, fresh onion gives the best results
  • 2 cloves Garlic minced fresh garlic
  • 1 tsp Salt to taste
  • 1/2 tsp Pepper to taste
  • 1/4 cup Olive Oil for frying

Method
 

Cooking Instructions
  1. Grate the zucchini, squeeze out excess moisture, and let it rest.
  2. Combine the drained zucchini with Parmesan cheese, breadcrumbs, onion, garlic, eggs, and flour in a mixing bowl. Season with salt and pepper.
  3. Shape the mixture into patties about 2-3 inches in diameter.
  4. Heat olive oil in a skillet over medium heat and fry each patty for 3-4 minutes on each side until golden brown.
  5. Drain excess oil on paper towels and serve warm, optionally with dips like tzatziki.
