For the Salad
  • 1 large Cucumber English cucumber can be used for a different texture.
  • 2 medium Carrots Can be julienned or shredded.
  • 2 stalks Celery Remove tough strings for better texture.
  • 1/4 medium Red Onion Green onions can be used for a milder flavor.
  • 1/4 cup Fresh Parsley Dill or cilantro can also be used.
For the Dressing
  • 2 tablespoons Lemon Juice Can substitute with lime juice.
  • 3 tablespoons Olive Oil Avocado oil can be used for a different flavor.
  • 1 teaspoon Dijon Mustard Yellow mustard or balsamic vinegar can be used as substitutes.
  • 1 tablespoon Maple Syrup or Honey Optional, omit for sugar-free version.

Method
 

Preparation
  1. Clean the vegetables by thoroughly washing them under cold water, using a vegetable brush if needed.
  2. Slice the cucumber into thin half-moons, julienne or shred the carrots, and slice the celery thinly.
  3. In a medium-sized bowl, combine lemon juice, olive oil, Dijon mustard, and optional maple syrup or honey, whisking to create a smooth dressing.
  4. In a large mixing bowl, combine cucumber, carrot, celery, and red onion, gently tossing to distribute.
  5. Drizzle the dressing over the vegetables, mixing gently to coat without crushing the veggies.
  6. Garnish with chopped fresh parsley and let the salad rest for 5 to 10 minutes before serving.
