Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C) and prepare a baking sheet lined with parchment paper.
  2. Crumble the ramen noodles onto the baking sheet and spread evenly. Add the sliced almonds and toast for about 5 minutes until golden.
  3. Sprinkle sesame seeds over the toasted noodles and almonds, then toast for an additional 1-3 minutes until seeds are golden.
  4. In a mixing bowl, whisk together rice vinegar, olive oil, honey, soy sauce, kosher salt, and black pepper for the dressing.
  5. In a large bowl, combine coleslaw mix, shelled edamame, shredded carrots, and chopped scallions. Add the toasted ramen and almonds, and toss gently.
  6. Drizzle the dressing over the salad mixture and toss until everything is evenly coated.
  7. Chill in the fridge for at least 30 minutes before serving. Top with mandarin oranges just before serving.
