  • 2 medium Persian Cucumbers or substitute with Japanese or English cucumbers
  • 8 oz Imitation Crab Meat shredded by hand
  • 1/2 cup Mayonnaise creamy dressing base
  • 2 tbsp Vinegar (rice or apple cider) adjust to taste
  • 1/2 tsp Garlic Powder
  • 1 tbsp Sugar to balance acidity
  • Pepper to taste
  • Sesame Seeds/Fresh Herbs for garnish

Method
 

Preparation Steps
  1. Wash the Persian cucumbers thoroughly and julienne them into thin strips. Sprinkle with sea salt and let rest in a colander for 10 minutes.
  2. Shred the imitation crab meat into small pieces using your hands and set it aside.
  3. In a small bowl, combine mayonnaise, vinegar, garlic powder, sugar, and pepper. Whisk until smooth and creamy.
  4. In a large bowl, combine cucumbers and crab meat. Pour the dressing over and toss gently until well coated.
  5. Garnish with sesame seeds or fresh herbs and serve cold.
