Step 1: Prep Chicken and Aromatics
- Pat the chicken thighs dry with paper towels. Heat olive oil in a large skillet over medium heat. Add chopped onion and sauté for 5 minutes until translucent. Add minced garlic and cook for another minute.

- Sprinkle smoked paprika, cumin, salt, and pepper over chicken thighs. Brown in the skillet for 4-5 minutes on each side.
Step 3: Simmer
- Pour BBQ sauce over chicken and ensure it's well coated. Lower heat to simmer, cover, and cook for 25-30 minutes.
Step 4: Shred Chicken
- Remove chicken from skillet and shred with two forks. Return shredded chicken to skillet and stir to combine with sauce.
Step 5: Serve
- Serve on buns or in lettuce wraps. Top with coleslaw if desired.
