Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and wash the beets thoroughly. Wrap each beet in aluminum foil and place them on a baking sheet. Roast the beets for about 45-60 minutes, until they are tender.
  2. In a large salad bowl, add a generous handful of fresh baby spinach. Next, slice or cube the roasted beets and gently toss them with the spinach. Add mandarin oranges.
  3. Crumble feta cheese into the salad mixture, mixing gently.
  4. In a small skillet, toast pine nuts over medium heat for about 3-5 minutes until golden brown and fragrant.
  5. In a small bowl, whisk together honey, mustard, and lemon juice until well blended.
  6. Drizzle dressing over the salad and gently toss to coat.
  7. Serve immediately or refrigerate for up to 30 minutes before serving.
