  • ½ cup Plain Greek Yogurt or non-dairy yogurt
  • 1 cup Freshly Grated Carrots
  • 2 tablespoons Maple Syrup or honey
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Ground Cinnamon
  • ½ teaspoon Ground Nutmeg
  • ½ teaspoon Ground Ginger
  • 1 pinch Salt
Crunchy Toppings
  • ½ cup Chopped Walnuts or Pecans keep separate until serving
  • ½ cup Raisins optional
  • ¼ cup Unsweetened Shredded Coconut optional
