  • 0.33 cup Granulated Sugar A sugar substitute can be used.
  • 2 teaspoons Baking Powder Ensure it's gluten-free.
  • 0.5 teaspoon Baking Soda Do not substitute with baking powder.
  • 0.5 teaspoon Salt Use same as for apple filling.
  • 6 tablespoons Unsalted Butter Can use vegan butter for a dairy-free version.
  • 0.75 cup Buttermilk For dairy-free, replace with non-dairy milk + 1 tbsp lemon juice.
  • 1 unit Egg Yolk Skip for vegan or replace with applesauce.

Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish.
  2. In a large mixing bowl, toss together the apples, brown sugar, cornstarch, and lemon juice along with cinnamon, nutmeg, and salt, and pour into the baking dish.
  3. In another bowl, mix the flour blend, granulated sugar, baking powder, baking soda, and salt. Cut in the cold butter until crumbly.
  4. Combine buttermilk and egg yolk, then add to dry ingredients and mix until just combined. Let rest for 10 minutes.
  5. Spoon the dough over the apple mixture, allowing some apples to peek through. Optionally sprinkle sugar or cinnamon on top.
  6. Bake for 40 to 55 minutes until bubbling and golden brown, covering with foil if it browns too quickly.
  7. Cool for 10-15 minutes on a wire rack before serving warm.
