- If using frozen raspberries, set them out to thaw for 30 minutes to 1 hour. For fresh raspberries, rinse them under cool water and dry.
- In a blender, combine thawed raspberries, cane sugar, and lemon juice. Blend on high until smooth, about 30 seconds.
- Pour the mixture into a Ninja Creami pint container, seal tightly, and freeze completely for at least 24 hours.
- After freezing, scrape off any dome of frozen raspberries on top.
- Insert the container into the Ninja Creami, select the SORBET setting, and blend for about 2 minutes.
- If the mixture appears crumbly, use the RESPIN cycle, adding a splash of juice if necessary, until smooth.
- Scoop the sorbet into chilled bowls and serve immediately.
