Step-by-Step Instructions
  1. In a mixing bowl, combine Greek yogurt, creamy peanut butter, honey or maple syrup, and vanilla extract. Blend until the mixture is smooth and creamy, about 2-3 minutes.
  2. Line an 8x8-inch baking dish with parchment paper for easy removal.
  3. Pour the yogurt-peanut butter mixture into the prepared baking dish and spread it out evenly with a spatula.
  4. Sprinkle granola and mini chocolate chips on top, gently pressing them down into the mixture.
  5. Place the baking dish in the freezer for 3-4 hours or until the mixture is completely solid.
  6. Once frozen, lift the bars out of the dish using the parchment paper, and cut into rectangular or square bars.
