Preparation Steps
- In a medium-sized mixing bowl, combine the Greek yogurt, powdered peanut butter, creamy peanut butter, and maple syrup. Blend thoroughly for 2-3 minutes until smooth.
- Line a small baking tray with parchment paper. Using a spoon or cookie scoop, portion and roll the mixture into approximately six balls. Freeze for 10-20 minutes.
- In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring until fully melted and smooth.
- Once the bites are frozen, dip each into the melted chocolate until fully coated. Place back on the tray and sprinkle with flaky sea salt if desired. Refrigerate for 15-20 minutes.
- Serve chilled and enjoy! Store leftovers in an airtight container in the fridge for up to 3-4 days or freeze for longer storage.
