Ingredients
  

For the Salad
  • 5 cups Spring mix salad greens A blend of arugula and spinach
  • 1 large Carrot Shaved or sliced
  • 1 cup Blueberries Fresh
  • 1/2 cup Red onions Thinly sliced
  • 1/2 cup Feta cheese Crumbled
  • 1/2 cup Walnuts Coarsely chopped
For the Orange Vinaigrette
  • 2 tablespoons Champagne vinegar
  • 1 orange Orange juice Freshly squeezed
  • 1 teaspoon Orange zest
  • 1 tablespoon Honey Or maple syrup for a vegan option
  • 1 teaspoon Dijon mustard
  • 1/4 cup Olive oil Extra virgin recommended
  • to taste Salt
  • to taste Pepper

Method
 

Combine the Salad Ingredients
  1. In a large mixing bowl, add the spring mix salad greens, shaved carrots, fresh blueberries, thinly sliced red onions, crumbled feta cheese, and coarsely chopped walnuts. Toss gently to ensure everything is evenly distributed.
Prepare the Vinaigrette
  1. In a separate bowl, whisk together the champagne vinegar, freshly squeezed orange juice, grated orange zest, honey, Dijon mustard, and a pinch of salt until well blended.
Emulsify the Dressing
  1. While whisking the vinaigrette, slowly drizzle in the olive oil over a span of 30 seconds to emulsify the dressing.
Dress and Toss the Salad
  1. Drizzle the orange vinaigrette over the salad mixture and gently toss to evenly coat all the ingredients.
Serve Immediately
