- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Lay a flour tortilla flat on a clean surface. Layer two slices of provolone cheese, then about three ounces of deli roast beef, and sprinkle French fried onions on top.
- Brush the edges of the tortilla with olive oil and tightly roll it from the filled end, pressing edges to seal.
- Place the rolled tortilla seam-side down on the baking sheet. Repeat with the remaining tortillas.
- Brush the tops and sides with more olive oil and bake for 8-10 minutes until golden brown and cheese is bubbling.
- In a saucepan, combine beef consommé, water, Worcestershire sauce, soy sauce, onion powder, and garlic powder. Simmer for 3-4 minutes.
- Allow roll ups to rest for 2 minutes, then slice into halves or thirds and serve warm with the dipping sauce.
