Step-by-Step Instructions
  1. In a mixing bowl, add 1 cup of unsweetened almond milk to 1/4 cup of chia seeds. Whisk them together vigorously for about 2 minutes to ensure no clumps form.
  2. Stir in 1 teaspoon of pure vanilla extract and sweeten with maple syrup or honey if desired. Mix well for around 30 seconds.
  3. Allow the mixture to sit at room temperature for 5–10 minutes, stirring gently every couple of minutes.
  4. Once thickened, gently fold in 1 cup of fresh or slightly thawed frozen raspberries.
  5. Transfer the mixture to serving bowls or jars, cover, and refrigerate for at least 2 hours or overnight.
  6. When ready to serve, garnish with fresh raspberries and mint leaves.
