- In a mixing bowl, add 1 cup of unsweetened almond milk to 1/4 cup of chia seeds. Whisk them together vigorously for about 2 minutes to ensure no clumps form.
- Stir in 1 teaspoon of pure vanilla extract and sweeten with maple syrup or honey if desired. Mix well for around 30 seconds.
- Allow the mixture to sit at room temperature for 5–10 minutes, stirring gently every couple of minutes.
- Once thickened, gently fold in 1 cup of fresh or slightly thawed frozen raspberries.
- Transfer the mixture to serving bowls or jars, cover, and refrigerate for at least 2 hours or overnight.
- When ready to serve, garnish with fresh raspberries and mint leaves.
