  • 1 cup gluten-free oats toasted
  • 1 cup walnuts, chopped
  • 1 tablespoon ground flaxseed for flax egg
  • 2.5 tablespoons water for flax egg
  • 2 tablespoons vegan Worcestershire sauce
  • 2 tablespoons nutritional yeast
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon red pepper flakes to taste
  • 1 teaspoon salt to taste
  • 1/2 teaspoon pepper to taste
  • 1 tablespoon oil for sautéing (optional)

Method
 

Step-by-Step Instructions
  1. Prepare flax egg by mixing ground flaxseed with water. Let sit for 10-15 minutes.
  2. Sauté onion and garlic in oil over medium heat for 3-5 minutes.
  3. Add mushrooms and cook for 5-7 minutes, then remove from heat.
  4. In a bowl, combine sautéed mixture with oats, walnuts, parsley, nutritional yeast, Worcestershire sauce, and the flax egg.
  5. Season with oregano, thyme, salt, and pepper; mix well.
  6. Form mixture into 1 to 1.5-inch meatballs.
  7. Cook meatballs by baking at 375°F for 25-30 minutes, pan-frying for 8-10 minutes, or air frying at 385°F for 10 minutes.
  8. Serve meatballs heated in marinara sauce for 3-5 minutes.
