Ingredients
  

For the Wrap
  • 2 pieces Whole Wheat Tortillas Substitute with gluten-free tortillas for a gluten-free option.
  • 1 cup Hummus Can be swapped for tahini or vegan cream cheese.
For the Filling
  • 2 cups Fresh Spinach Leaves Alternatively, use kale or mixed salad greens.
  • 1 medium Grated Carrot Shredded zucchini can be used as an alternative.
  • 1 medium Cucumber Can be replaced with bell pepper.
  • 1 medium Red Bell Pepper Any color bell pepper or roasted alternatives can be used.
  • 1 medium Avocado Sliced olives can be a tasty substitute.
  • 1 cup Cherry Tomatoes Replace with sun-dried tomatoes for a richer taste.
For Seasoning
  • 1 tbsp Lemon Juice Lime juice or a splash of vinegar are good alternatives.
  • to taste Salt
  • to taste Black Pepper

Method
 

Preparation
  1. Wash and dry all fresh produce. Slice cucumber and red bell pepper into thin pieces, halve cherry tomatoes, and grate the carrot. Toss spinach with lemon juice, salt, and black pepper.
  2. Place a whole wheat tortilla on a clean cutting board. Spread hummus evenly across the surface of the tortilla, reaching the edges.
  3. In the center of the tortilla, layer seasoned spinach, grated carrot, cucumber slices, red bell pepper strips, avocado, and cherry tomatoes.
  4. Fold in the sides of the tortilla and roll tightly from one end to the other, using some hummus to seal the edge.
  5. Cut the wrap diagonally in half and serve.
