Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 375°F (190°C) and prepare your baking dish.
  2. Rinse the uncooked quinoa thoroughly under cold water, then set aside.
  3. In a baking dish, combine quinoa, black beans, corn, diced tomatoes, and vegetable broth.
  4. Add chopped bell peppers and frozen peas. Stir to mix all ingredients.
  5. Drizzle olive oil and sprinkle chili powder, garlic powder, cumin, and salt and pepper. Stir gently.
  6. Cover the dish tightly with aluminum foil and bake for 45 minutes.
  7. Remove foil, stir the casserole, and sprinkle cheddar cheese on top.
  8. Bake uncovered for an additional 10-15 minutes until cheese is melted and bubbling.
  9. Let it rest for 5 minutes before serving. Garnish with fresh cilantro if desired.
