  • 8 oz short pasta (rotini or penne)

  • 1 lb shrimp fresh or pre-cooked
  • 8 oz imitation crab or real crab/lobster
For the Veggies
  • 1 cup celery diced
  • 1 cup red bell pepper diced
  • 1/2 cup red onion diced
  • 1/4 cup fresh parsley finely chopped
For the Dressing
  • 1/2 cup mayonnaise or Greek yogurt
  • 1/4 cup sour cream or plain yogurt
  • 1 tbsp Dijon mustard
  • 2 tbsp lemon juice
  • 1 tbsp Old Bay seasoning
  • to taste salt

Method
 

Step-by-Step Instructions
  1. Cook the pasta in a large pot of salted boiling water until al dente, about 8-10 minutes. Drain and rinse under cold water.
  2. For fresh shrimp, cook in a skillet for 2-3 minutes until pink. If pre-cooked, chop into pieces and cool.
  3. Chop celery, red bell pepper, red onion, and parsley. Set aside in a mixing bowl.
  4. In a bowl, whisk together mayonnaise, sour cream, Dijon mustard, lemon juice, and Old Bay seasoning. Adjust seasoning to taste.
  5. Combine cooled pasta, shrimp, imitation crab, and chopped veggies in the large bowl. Pour the dressing over and toss gently.
  6. Cover and chill in the refrigerator for at least 1 hour before serving.
