Method
 

Step-by-Step Instructions
  1. Begin by washing and drying your zucchini and corn thoroughly. Slice the zucchini and cut the corn if using on the cob.
  2. Marinate your choice of chicken, shrimp, or tofu in olive oil and seasonings for at least 30 minutes.
  3. Preheat your grill to medium-high heat (around 400°F) and oil the grill grates.
  4. Place your marinated protein on the grill and cook chicken for 6-8 minutes per side until the internal temperature reaches 165°F.
  5. Grill shrimp for 2-3 minutes per side and tofu for 4-5 minutes per side until golden brown.
  6. Add zucchini and corn to the grill, cooking zucchini for 3-4 minutes per side and corn for about 5-6 minutes, rotating occasionally.
  7. Remove grilled items and arrange them on a serving platter. Drizzle with lemon vinaigrette and sprinkle with fresh herbs.
  8. Serve immediately, and pair with refreshing side dishes if desired.
