Method
 

Preparation Instructions
  1. Wash the mixed salad greens thoroughly and dry them before placing in a salad bowl.
  2. Rinse the fresh blueberries in a colander and drain thoroughly.
  3. Chop the shelled pistachios into smaller pieces and sprinkle over the salad.
  4. Crumble the feta cheese and evenly sprinkle it over the salad.
  5. Thinly slice the red onion and add to the salad mix, tossing gently.
  6. In a small bowl, whisk together the olive oil, honey, balsamic vinegar, Dijon mustard, salt, and black pepper.
  7. Pour the dressing over the salad and toss gently to coat all ingredients.
  8. Taste and adjust seasoning with more salt or pepper if desired.
