  1. In a double boiler over simmering water, whisk together egg yolks and granulated sugar for about 5 minutes until the mixture becomes pale and thick.
  2. Remove from heat and add mascarpone cheese to the egg mixture. Whisk gently until smooth and fully combined.
  3. In a separate bowl, pour heavy whipping cream and add sifted matcha powder and optional vanilla extract. Beat on medium-high speed for about 3-5 minutes until medium peaks form.
  4. Gently fold the whipped cream into the mascarpone mixture until well combined.
  5. In a shallow bowl, mix matcha powder with granulated sugar and hot water. Whisk vigorously until frothy and well dissolved.
  6. Quickly dip each ladyfinger into the matcha soaking mixture and layer them vertically in your serving dish.
  7. Spread a generous layer of the mascarpone cream over the dipped ladyfingers and repeat the process until the dish is filled.
  8. Cover the dish with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
