  • 4 cups Mixed Salad Greens A blend of spinach, arugula, and romaine
  • 1 cup Strawberries hulled and sliced
  • 1 Orange segmented
  • 1/2 cup Cucumber thinly sliced
  • 1/4 cup Red Onion thinly sliced
  • 1/4 cup Feta Cheese optional
  • 1/4 cup Walnuts or Pecans toasted
For the Citrus Vinaigrette
  • 1/4 cup Olive Oil or avocado oil
  • 2 tablespoons Orange Juice freshly squeezed
  • 1 tablespoon Lemon Juice
  • 1 teaspoon Honey or Maple Syrup for sweetness
  • Salt and Pepper to taste

Method
 

Preparation
  1. Wash the salad greens thoroughly in cold water, then dry them. Hull and slice strawberries, segment the orange, and slice the cucumber and red onion.
  2. If using nuts, toast them in a dry skillet over medium heat for about 5 minutes until golden, stirring frequently.
Making the Vinaigrette
  1. In a small mixing bowl, whisk together olive oil, orange juice, lemon juice, and honey until well mixed.
Combining the Salad
  1. In a large bowl, toss together salad greens, strawberries, orange segments, cucumber, and red onion. Add the toasted nuts.
Dressing the Salad
  1. Drizzle the vinaigrette over the salad and toss gently to coat.
Garnishing
  1. Optionally, crumble feta cheese over the top before serving.
