For the Filling
  • 2 tablespoons Olive Oil Can substitute with vegetable oil.

  • 3 medium Onions Thinly sliced sweet onions are best.
  • 1 tablespoon Sugar Honey or maple syrup can substitute.
  • 1 pinch Salt Balances flavor.
  • 1 pinch Pepper Adjust to taste.
  • 1 tablespoon Balsamic Vinegar Red wine vinegar can substitute.
  • 1 teaspoon Thyme Use fresh or dried.
  • 4 ounces Goat Cheese Feta can be an alternative.

Method
 

Caramelized Onions
  1. In a large skillet, heat 2 tablespoons of olive oil and 1 tablespoon of butter over medium heat until melted. Add 3 thinly sliced onions, 1 tablespoon of sugar, and a pinch of salt and pepper. Stir occasionally and cook undisturbed for 5 minutes until translucent. After about 15 minutes, stir in 1 tablespoon of balsamic vinegar and 1 teaspoon of fresh thyme. Continue cooking for another 5 minutes until jams and sweet.
Prepare Puff Pastry
  1. Preheat oven to 400°F. Roll out 1 sheet of puff pastry to about 1/8 inch thick. Cut into 6 rectangles. Transfer to a lined baking sheet, leaving space between each. Prick lightly with a fork.
Assemble Tarts
  1. Spread caramelized onions on each pastry rectangle, leaving a border. Crumble 4 ounces of goat cheese on top and sprinkle with extra thyme.
Bake
  1. Bake for 15 minutes until golden brown. Watch closely to prevent over-baking. Cool for a few minutes before serving.
