Method
- Preheat the oven to 375°F (190°C) and grease a 9x13-inch baking dish.
- Spread uncooked jasmine rice evenly across the bottom of the dish.
- Place the boneless, skinless chicken on top of the rice and season with salt and pepper.
- In a bowl, whisk together chicken broth and tzatziki sauce; pour over the chicken and rice.
- Cover the dish tightly with foil and bake for 40-45 minutes.
- Remove foil, crumble feta cheese on top if desired, and bake uncovered for another 5-10 minutes.
- Garnish with fresh herbs before serving.
