Ingredients
  

For the Chicken
  • 2 pieces Boneless, skinless chicken breasts or thighs
For the Rice
  • 1 cup Jasmine rice
  • 1 cup Brown rice Substitute for a hearty option, add more liquid and time to cook.
For the Tzatziki Sauce
  • 1 cup Greek yogurt Dairy-free yogurt can be used.
  • 2 tablespoons Lemon juice Fresh lemons work best.
  • 1 teaspoon Garlic powder
  • 1 teaspoon Dill Fresh or dried.
For the Broth
  • 2 cups Chicken broth Ensure it covers the rice completely.
For the Optional Topping
  • 1/2 cup Feta cheese Omit for a dairy-free version.
For the Fresh Herbs
  • 2 tablespoons Fresh dill or parsley Adds freshness.

Equipment

  • 9x13-inch baking dish

Method
 

  1. Preheat the oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  2. Spread uncooked jasmine rice evenly across the bottom of the dish.
  3. Place the boneless, skinless chicken on top of the rice and season with salt and pepper.
  4. In a bowl, whisk together chicken broth and tzatziki sauce; pour over the chicken and rice.
  5. Cover the dish tightly with foil and bake for 40-45 minutes.
  6. Remove foil, crumble feta cheese on top if desired, and bake uncovered for another 5-10 minutes.
  7. Garnish with fresh herbs before serving.
